The alpine water really does make a difference—this pasta holds its shape perfectly and has that clean, wheaty taste I’ve been chasing. Cooked it to just under the package time and got that ideal al dente bite for a weekday carbonara.
The texture after cooking is genuinely spot-on for al dente, and you can tell the durum wheat is high quality from the bite. I used these for a simple aglio e olio and the pasta held the sauce perfectly without turning mushy.
Boiled these for the full time and they still came out with that proper bite, exactly how pasta should feel. The water stayed clear, which tells me the wheat is genuinely good quality. This is my new go-to for weeknight carbonara.
