The nutty, slightly earthy flavor of this spelt pasta really comes through even with a simple tomato sauce, and it held its shape perfectly in the leftover container the next day. For a white pasta, the extra protein and fiber make it feel like a slightly smarter choice without sacrificing texture.
Cooked up al dente in about nine minutes and the texture held beautifully in a pesto sauce. You can really taste the difference that the higher protein and fibre from the spelt makes, it feels more substantial than regular wheat pasta. This is my new go-to for a hearty weeknight dinner.
Finally a pasta that doesn’t turn to mush after two minutes — this fusilli held its shape perfectly even in a hearty veggie sauce. The higher fibre and protein from the spelt actually made dinner feel more filling, and the nutty taste is a nice change from regular white pasta.
