The beetroot and oat mix holds together beautifully on the grill—no crumbling or sticking to the rack. Served it in a bun with some feta and it was easily the heartiest veggie option at our cookout.
Grilled one of these on the barbecue last weekend and the beetroot really comes through with a sweet, earthy taste that held up perfectly against the char. Even the pickiest eater at the table asked for the recipe, so that says something.
The oats give it a nice hearty texture that actually holds together on the grill, and the spice mix is subtle but adds real depth. Threw one in a bun with some crispy onions and it was properly satisfying.
